Join MacCarthy’s Bar in the gin revolution. There really is a gin to suit any palate. Today there are some extremely exotic and unusual flavourings to be found but one thing remains central to all of them: juniper. Simply put, if it doesn't have any juniper then it's not a real gin. Maccarthy’s Bar stocks an impressive range of gins, each of them special in its own way.

    Gin is a spirit that derives its predominant flavour from juniper berries (juniperus communis). From its earliest origins in medieval times, gin has evolved from use in herbal medicine to key item in the spirits industry.

    It was developed on the basis of the older ‘jenever’, becoming popular in Britain, especially in London, when William of Orange occupied the English, Scottish and Irish thrones with his wife Mary during the 17th century.

    Now it’s one of the world’s most complex and best-loved spirits with a history that spans centuries, reaching back to the very dawn of distillation.

In its distinctive blue bottle, Bombay Sapphire gin contains ten hand-selected botanicals from exotic locations around the world which are gently vapour-infused to capture their bright, vibrant flavours.

    The distillery, Laverstoke Mill at Whitchurch, Hampshire, UK, still follows a distinctive gin-making process based on an original recipe from 1761.

    Try Bombay Sapphire with Fever Tree tonic water, from Chelsea Wharf, London,  where essential oils of fruits, flowers and herbs from the Med shores are blended with high-quality quinine from the 'fever trees' of the eastern Congo, creating special and delicate drinks.
